Ingredients
  

  • 1 package sheet puff pastry frozen or homemade
  • 8 oz slice brie cheese soft and creamy
  • 1 cup fresh cranberries tart and firm
  • 1 egg egg beaten, for egg wash
  • 1 tbsp honey honey optional, for garnish
  • fresh thyme thyme for garnish

  • Rolling pin
  • Small sharp knife
  • Parchment paper

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry slightly on a floured surface to relax the dough, then use a small sharp knife to cut it into 24 small squares, about 2 inches each.
  3. Place each pastry square into a mini muffin tin or directly on the baking sheet, pressing lightly to form a small cup or well in the center.
  4. Slice the brie into small pieces and place a piece into the center of each pastry square. Top with a few cranberries, pressing them gently into the cheese.
  5. Brush the edges of the pastry with the beaten egg to give a golden finish.
  6. Bake in the preheated oven for 12-15 minutes, or until the pastry is golden brown and the cheese is bubbling and melted.
  7. Remove the bites from the oven and let them cool for about 5 minutes; the cheese will set slightly and be easier to handle.
  8. Garnish each with a small sprig of thyme and drizzle with honey if desired for a touch of sweetness.
  9. Arrange the Cranberry Brie Bites on a serving platter and enjoy while warm or at room temperature, perfect for festive gatherings.
