Pineapple Mint Popsicles

These refreshing homemade popsicles combine juicy pineapple and cooling mint, blended into a smooth mixture and frozen into bright, tropical treats. The final texture is icy and firm, perfect for a quick summer cool-down with vibrant flavors and a hint of herbal freshness.

Ingredients
  

  • 2 cups pineapple chunks fresh or frozen
  • 1 handful fresh mint leaves about 10 leaves
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey or agave syrup, adjust sweetness as needed
  • ½ cup water or coconut water for extra tropical flavor

Equipment

  • Blender
  • Fine sieve
  • Popsicle molds and sticks
  • Warm water

Method
 

  1. Place the pineapple chunks and fresh mint leaves into your blender.
  2. Blend until the mixture is smooth and fragrant, about 30 seconds. You should see a bright yellow color with flecks of green from the mint.
  3. Pour the mixture through a fine sieve into a bowl to strain out any fibrous bits, pressing gently to extract as much flavor as possible.
  4. Stir in the lime juice, honey, and water (or coconut water) until well combined. Adjust sweetness if needed.
  5. Pour the smooth mixture into your popsicle molds, leaving about ¼ inch at the top to allow for expansion during freezing.
  6. Insert the sticks into the molds and place them flat in your freezer. Freeze for at least 4 hours or overnight until completely solid.
  7. Once frozen, run warm water over the outside of each mold for about 10 seconds to loosen the popsicles.
  8. Gently wiggle the popsicles free from the molds and enjoy immediately for the best icy texture, or store in an airtight container for later.

Notes

For an extra tropical twist, replace water with coconut water. Adjust sweetness to match pineapple ripeness. Use fresh mint for the best aroma and flavor.
